Recipe Sunday

This week there were requests for Chicken Enchiladas and Burgers. So, here are the ones I have for you!


CHICKEN ENCHILADAS

1 lb. chicken breast
1/2c H2O
5 tsp. garlic
1 cup chopped onion
4 tsp. oil
2 cans green chilies
4 tsp. chili powder
1 1/4 tsp. salt
1 tsp. cumin & Oregano
1/4 tsp pepper
1/2 c. flour
1 1/2 c. chicken broth
1 c. milk
2 c. shredded cheese
12 corn tortillas
1 c. green onions

Combine chicken, H20, 2 tsp. garlic to a boil. Reduce heat, cover and simmer for 20 minutes. Cut chicken into strips, reserve liquid. Saute onion in oil. Add garlic, chilies and saute 1 minute. Add seasoning. Stir in flour. Gradually add broth, milk and reserve liquid. Bring to a boil for 2 minutes. Remove from heat. Stir in 1 cup of cheese and chicken.

Put a layer of four tortillas in the bottom of a 9x9 casserole dish. Cover with some chicken mixture. Repeat 3 times, ending in chicken. Sprinkle with cheese and green onions. Cover and bake at 400 degrees for 25 minutes.

TURKEY BURGERS w/GOAT CHEESE

2 lbs. lean ground turkey
3 tbsp. chopped parsley
1 tbsp. chopped rosemary
1/4 tsp salt
1/4 tsp pepper

8 whole wheat hamburger buns
4 oz. goat cheese, cut into 8 slices

Prepare grill. Combine first 5 ingredients in a large bowl. Divide turkey mixture into 8 equal portions. Place patties on grill rack coated with cooking spray. Cook 5 minutes on each side. Place buns, cut sides down, on grill rack. cook 1 minute or until lightly browned. Top each patty with 1 slice goat cheese. serve on buns.

I serve mine with grilled onions, tomatoes, avocado slices and pesto (instead of mayo).
