Recipes of the Week

Here it goes. Some yummy I'm cookin up this week!


Vegetable Soup

2 tblsp olive oil
1 large yellow onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3-14 oz cans of chicken, vegetable broth
1 cup H2O
2 yukon gold potatoes
1 tsp thyme leaves, dried
1/2 tsp salt
1-14oz diced tomatoes
1/4 lb green beans
1 cup chopped broccoli

heat oil in saucepan. add onion, carrot, and celery. cook until tender (5 min). Add broth, water, potatoes, thyme and salt. Increase heat to high and bring to boil. Reduce heat and simmer partially covered 15 minutes. Add tomatoes, beans and broccoli; cook 5-10 minutes or until tender.

Serve with warm whole wheat bread! yummy!

Taco Chili

1 lb ground turkey
1 large yellow onion, chopped
1 pkg low sodium taco seasoning
1 pkg low fat ranch dressing
1 1/2 c water
1 can pinto beans
1 can kidney beans
1 can diced tomatoes, 14.5 ounces
1 can whole kernel corn
1 can tomato sauce-15 oz
1 can chopped green chili 4.5 ounces

Cook onion and meat in large soup pot with 1 tblsp. oil. Stir in both seasoning packets, stir well. Add water and stir. Open all the cans and just dump them in the pot, undrained. Bring to a boil. Simmer for 1 hour. Let cool in pot.

Garnish with tortilla chips, cheese, avocado, sour cream....whatever you like!

Tastes great the next day!

Just made chix souvlaki tonight-delish!! We are behind, because we were sick all week (so we ate soup).
