Snacks and St. Patties

This week I am determined to make at least one yummy snack for London so we can lay off the Goldfish crackers for a bit. He loves these zucchini chips...try them out! At the end there is a fun alternative to corn beef and cabbage for St. Pat's!


ZUCCHINI OVEN CHIPS

1/4 c. homemade breadcrumbs (made with whole wheat bread)
1/4 c. Parmesan cheese
1/4 tsp. garlic
1/4 tsp. pepper
2 tbsp milk
3 cups sliced zucchini, thin

Combine the first 5 ingredients, stirring with a whisk. Dip zucchini in milk, then in spices. Place coated slices on cooking sheet sprayed with cooking spray. Bake 425 degrees for 30 minutes, or until crisp.

HOMEMADE HUMMUS AND PITA CHIPS

1 can garbanzo beans (15 oz)
4 tbsp olive oil
3 tbsp lemon juice
1 tbsp. sesame oil
2 cloves garlic, peeled

Pour garbanzo over strainer, saving liquid. Blend beans, 2 tbsp oil, lemon juice, sesame oil, garlic and 1/3 c reserved liquid in blender until creamy. If to thick, continue to add reserve liquid until it is the consistency you desire. Put is serving dish and drizzle with 2 more tbsp oil.

Cut pita bread into triangles and toast in toaster over until crisp. Serve with hummus.



GUINNESS STEW

1 tsp thyme, fresh is possible
1/2 tsp. salt
1/2 tsp. pepper
3 lbs. stew meat, cut into 2" cubes
1 c. chopped yellow onion
1c. beef broth
1 6 pack Guinness Stout beer (you will only use 1 for the recipe, but you can drink the rest!)
pearl onions
8 oz. white mushrooms
1/4 c. water
2 tbsp. flour
3/4 c. cranberries
8 c. egg noodles, prepared.

Combine 1st 3 ingredients. Sprinkle over beef. Coat pan w/spray. Add beef and cook 6 minutes. Add chopped onion, broth, and stout. Bring to boil. Cover, reduce heat and simmer 2 hrs. Stir in pearl onions and mushrooms. Cook covered for 15 minutes. Combine 1/4 c water and flour. Add to pan with cranberries, cook 5 minutes. Serve over hot noodles!

hi guys! miss you, think about you often. i love that you are putting recipes on your blog jenn. i plan my recipes at the beginning of the week and am always looking for something new. love the zucchini chips idea...i think those will be a hit with my kids.

our house is still waiting for a visit. it would be so fun to see our boys play together!
