Recipes!!

Hey there. I know, I know. It has been awhile. Trust me, I missed it as well. And even though these are the finest in my cuisine, these two dishes are quick and tasty!

PENNE WITH BACON, ASPARAGUS AND PARMESEAN

1 lb asparagus, cut into 1 inch pieces
1 lb penne
1 tbsp olive oil
5 strips low sodium bacon
2 cloves garlic, sliced
1/2 cup Parmesean cheese, grated
2 cans 98% fat free Campbell's Cream of Mushroom Soup
1/2 cups 1% milk
1/2 cup water
1/2 teaspoon black pepper

Boil water in large pot. Place asparagus in boiling water and cook for 2 minutes. Remove and cool asparagus by running under cold tap water, set aside.
Cook penne, in the pot used for the asparagus for 8 minutes. Strain and toss with 1 tablespoon of olive oil. Cook bacon in large skillet over medium heat until crispy, reserve 2 teaspoons of bacon drippings. Chop bacon into large pieces and saute for 3 minutes with the garlic and onions. Take off heat and set aside.
Combine soup, milk, water, Parmesean cheese and pepper. Mix well. Add soup mixture and cut asparagus to the bacon and onions. Bring to boil and stir in penne, coating pasta evenly with the sauce.




FETTUCCINE ALFREDO WITH BACON

1 (9-oz) package refrigerated fresh fettuccine
2 slices applewood-smoked bacon, chopped
1 tsp minced garlic
1 tbsp flour
1 cup low fat milk
2/3 cup grated Parmigiano-Reggiano cheese
1/2 tsp salt
2 tbsp chopped fresh parsley
1/2 tsp black pepper

Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 1/4 cup cooking liquid.
While pasta cooks, cook bacon in a large nonstick skillet over medium-high heat 4 minutes or until crisp, stirring occasionally. Remove bacon from pan ,reserving drippings. Add garlic to drippings in pan; saute 1 minute, stirring constantly. Sprinkle flour over garlic; cook 30 seconds, stirring constantly. Gradually add milk, stirring constantly; cook 2 minutes or until bubbly and slightly thick, stirring constantly. Reduce heat to low. Gradually add cheese, stirring until cheese melts. Stir in salt and reserved 1/4 cup cooking liquid. Add hot pasta to pan; toss well to combine. Sprinkle with bacon, parsley, and pepper.


Guess you figured out I had some bacon laying around! I love a good pasta on a cold evening. Hope you like it.
